Sam Bo Luong

Longan Dessert/Longan Tong Sui (龙眼糖水)

Ingredients:

2-3 oz dried longan
6 cups water
6 dried red dates
12 ginkgo nuts
5 pieces snow fungus (soaked until soft)
Sugar to taste

Method:


Bring water to boil. Add the dried longan, red dates, ginkgo nuts, and snow fungus. Boil in low heat for 30-45 minutes or until the water turns brown in color. Add sugar to taste. Serve warm or cold with ice cubes.

Snow Fungus, Ginkgo and Barley - sweet or savory

Trying to hit the right notes here (THIS...is...American Idol, NOT). Sing "Doh Re Me...". Sing "Hot, Tart, Sweet...". Presenting Snow Fungus, Ginkgo and Barley Drink Dessert. I know lime juice is available following the Assam Prawns dish, but can I serve you this sweet dessert instead?

Dessert - Snow Fungus, Ginkgo and Barley Drink Dessert

Snow Fungus, Ginkgo and Barley Drink Dessert (serves 2-3)
Ingredients:
-About 2-3 pieces snow fungus, soaked in water before usage
-About 1 cup pearl barley, washed
-Few pieces of ginkgo nuts, fresh or canned, with inner seeds removed
-Honey dates and/or rock sugar (ratio adjusted accordingly to your ingredient availability or liking)
-Pandan leaves, knotted (option)
-Water, quantity based on ingredients

Method:
1. Place all the ingredients in slow-cooker, and pour in water till ingredients are submerged
2. On high heat ~45mins-1hr till barley and fungus are cooked, then turn to low heat 1-2hrs to allow ingredients and textures to soften and flavors to infuse. If not sweet, add in more rock sugar, to taste
3. Can be served warm or cold

All three ingredients (snow fungus, ginkgo and barley) can be used in sweet and savory cuisines.


Snow fungus :Practically tasteless, but prized for its jelly-like and crunchy texture. You can see them in sweet soups and desserts such as doubled boiled papaya and snow fungus (木瓜炖雪耳 ); and savory dishes such as doubled-boiled chicken soups. The wood ear/black fungus is another fungus species that can be used in stir-frys.

Barley: Pearl barley(above) or pearled barley is hulled barley which has been processed further to remove the bran. It may be polished, a process known as "pearling". Barley can be used in savory stews and soups, such as chicken stew and minestrone soup. But more common is the sweet barley drink/water- a good diuretic which is known to quench the thirst and expel toxins from the body.

Ginkgo : Expensive ingredient (due to labor intensiveness to crack the hard shell of each nut, removing the thin skin, and removing the young shoot that is usually bitter. So, usually what you eat is just the sweet flesh of ginkgo nuts. There are claims that ginkgo improves memory (it remains to be proven), and there are side-effects too. Usually used in sweet desserts - a popular dessert is barley, soya beancurd sheets(a.k.a foo chuk, in Cantonese) and ginkgo nut drink (can be almond-milky-based, or clear soup-like base). Due to their hint of sweetness, it complements well in a savory dish like this too. And it can be real yummy refreshing

Cherry desert

Ingredients:

  • 1 cup pitted fresh cherries
  • 1/2 cup sugar
  • 1 large banana, peeled and sliced
  • 1/4 cup coarsely chopped walnuts or pecans
  • 1/2 cup whipping cream, whipped

Preparation:

Combine cherries and sugar; chill for 1 to 2 hours. Combine chilled cherries with banana and nuts; fold in whipped cream. Serve in dessert glasses. Serves 4.

Bondi Iceberg Club in Bondi Beach

I will post reviews, tips and discounts about restaurants and cafes here too.

Went there with Vic, Tin and Yan. All of us had fish dishes ranging from $20-$22.

Later on, I realised the mussle pot is only $15.

And then I found out the poster in the Ladies room, $10 meals for Tuesday night, Thursday and Friday nights.

Tuesday night: all pasta dishes
Thursday: steak dish
Friday: ...?

Must try the specials next time!

My banh canh/lot gio heo

1 gio` heo: remove fat, and unwanted skin, clean properly with hot water.
Boil them in a pressure cooker.
While waiting it to be boiled, put some black fungus into warm water, and some dried kiitate mushroom too, chop some carrot, and onions.

Grill 1 dried squid, smash it, and tear it into small pieces.

Once the water with pork bones in there boiled, put some salt, 2-3 small cubes of rock sugar, carrot, fungus, mushroom, squid and 1 cube of condensed pho marinate

Cook again until it boils and put onions and spring onions on top
served with banh lot or banh canh, beansprout and some lettuce,

Vật liệu:- 2 chén nếp (vo sạch, ngâm qua đêm)- 1/2 chén đậu xanh không vỏ (vo sạch, ngâm qua đêm)- 1 lon bắp HOMINY - 1/2 chén đậu phọng rang vàng, giả sơ, trộn vào chút xíu muối + ít đường (hoặc mua loại trong lon, honey roasted peanuts cho lẹ, hihihi... ). - Vài củ hành hương- Dầu ănCách làm: - Vo nếp lại 1 lần nữa, cho 1/2 teaspoon muối vào, trộn đều sau đó vớt nếp ra rỗ, rồi cho vô xững hấp chín.- Vo đậu xanh lại 1 lần nữa, vớt ra rỗ, rồi đem hấp chín. Tán đậu cho nhuyễn.- Trút bắp Hominy ra rỗ, xả lại nước lạnh, đem nấu cho mềm, sau đó trút ra rỗ để ráo. - Hành hương xắt mỏng rồi đem phi với dầu ăn cho vàng. Trộn bắp vô chung với xôi, hấp khoảng 5 phút. Trút ra dĩa lớn, cho đậu xanh lên mặt. Rưới đều hành phi lên trên. Cuối cùng là cho đậu phọng đã trộn đường + muối lên trên. Dùng nóng rất ngon.

Xoi dau xanh

XÔI VÒNguyên liệu:- 1kg nếp thơm- 500g đậu xanh cà- 3 muỗng súp dầu ăn - Muối, đường.Cách làm:- Nếp vo sạch, ngâm nước qua đêm, sau đó vớt ra rỗ và xả lại vài lần với nước lạnh, để cho thật ráo. - Đậu xanh ngâm nước qua đêm, đãi vỏ, hấp chín với 1/2 muỗng cafe muối, quết hoặc xay đậu cho thật nhuyễn, chia đậu ra làm 2, vò chặc thành 2 nắm, để nguội.- Trộn nếp với 1/2 muỗng cafe muối. Dùng dao xắt 1 nắm đậu ra thành từng lát mỏng, rồi cho vào chung với nếp. Rưới dầu ăn vào, trộn cho thật đều. Cho vào xững hấp chín, thỉnh thoảng nhớ mở nắp xững để xả hơi, rắc nước trong nắp, rưới đều 2 muỗng súp đường trắng, dùng đũa xới xôi cho đều. Nhắc xuống, cho xôi ra mâm trộn 1 nắm đậu xanh còn lại đã được bào/xắt mõng vào, dùng đũa xới đều cho hạt nếp tơi ra, rời rạt.Xôi vò nấu khéo là hạt xôi mềm và bám đều đậu xanh và rời hạt chứ không dính cục.Xôi vò ăn chung với cơm rượu hoặc với chè.

Prepare for a BBQ for 20 people

From my experience today and previous BBQ, the following items would make a perfect BBQ for around 20 people:

Bread:
- 2 bags of white breads

Meat:
-1 kg of lamp chops
- 1 kg of beef chops
- $10 -$15 of ready BBQ chicken (buy in Marickville) because chicken takes long time to cook
- 10 skews of chicken (optional)
- 2 -2.5 kg of mince pork (nem nuong'). this is really popular
- $10 - $15 of BBQ pork or xa' xiu' (buy in Marickville)
- 2 kg of sausages (some people really like it and they only eat that) - 2 types maybe

Seafood:
- 1.5 kg of cooked prawns (don't need to buy the expensive ones because cooked prawns are still nice on the grill)
- 1 kg of octopus
- 2 kg of mussles

Salad:
2 big bowls of mix salad

Drinks:

- 1 bottle of orange juice
- 1 bottle of coke
- 12-15 bottles of beer


Others:
- Lemon
- Salad dressing
- sauces
- 2 bags of chips and 1 dip
- peanuts

Games:


Notes:
- Ask people to bring games if they have or bring some desert or home-made food
- Cut meat into thin slices so it's quick to cook them
- Bring a mat to cover tables
- If we get there early, then we can start cooking 30 min before people come because when a lot of people arrive, we won't have enough food for all of them.
- Remember when cooking octopus, don't let its juice go into other meat because it'll make sausages and meat smell fishy.
- Drizzle some beer on top of the prawns (make them more tasty)
- Squeeze some orange juice into chicken while grilling it

Mix handy lunchbox

The funkychef cafe on Harris st in Pyrmont has a lunch box of chicken wraps,bacon rolls, pumkin tart, fruit stick, rice paper rolls.
for $10.

This lunch box inspires me to produce something similar but in a more attractive box (like the one I had in Melbourne with Beoh and Shai).
A lunch box with full of finger food: rice paper rolls: with soy + peanut sauce (or hoisin sauce) + chicken fillet + vermicilli + mint, we should
invent differnt kinds of rolls, fries (such as chuoi chien, carrot, sweet potatoes like tempura but VNese style)
and other small food like shushi
