How to marinate BBQ Pork spare ribs

BBQ pork spare ribs:

- Ngu vi huong
- garlic (fry it with oil first to increase its flavour)
- Salt
- Chicken powder
- Lemon grass

Prepare for a BBQ for 20 people

From my experience today and previous BBQ, the following items would make a perfect BBQ for around 20 people:

Bread:
- 2 bags of white breads

Meat:
-1 kg of lamp chops
- 1 kg of beef chops
- $10 -$15 of ready BBQ chicken (buy in Marickville) because chicken takes long time to cook
- 10 skews of chicken (optional)
- 2 -2.5 kg of mince pork (nem nuong'). this is really popular
- $10 - $15 of BBQ pork or xa' xiu' (buy in Marickville)
- 2 kg of sausages (some people really like it and they only eat that) - 2 types maybe

Seafood:
- 1.5 kg of cooked prawns (don't need to buy the expensive ones because cooked prawns are still nice on the grill)
- 1 kg of octopus
- 2 kg of mussles

Salad:
2 big bowls of mix salad

Drinks:

- 1 bottle of orange juice
- 1 bottle of coke
- 12-15 bottles of beer


Others:
- Lemon
- Salad dressing
- sauces
- 2 bags of chips and 1 dip
- peanuts

Games:


Notes:
- Ask people to bring games if they have or bring some desert or home-made food
- Cut meat into thin slices so it's quick to cook them
- Bring a mat to cover tables
- If we get there early, then we can start cooking 30 min before people come because when a lot of people arrive, we won't have enough food for all of them.
- Remember when cooking octopus, don't let its juice go into other meat because it'll make sausages and meat smell fishy.
- Drizzle some beer on top of the prawns (make them more tasty)
- Squeeze some orange juice into chicken while grilling it
