Caesar salad with Bacon

Great recipe from Better Home and Garden Show:

And here is the recipe from http://www.taste.com.au:

Ingredients (serves 6):

  • 1 small baguette, thinly sliced
  • 1/2 cup olive oil
  • 2 free-range eggs
  • 2 cos lettuce, outer leaves discarded, leaves separated, rinsed, dried
  • 1 cup Caesar salad dressing
  • 6 anchovy fillets, rinsed, halved lengthway
  • 80g parmesan cheese, shaved

    1. Preheat oven to 180°C. Place bread slices on a large oven tray. Brush both sides with oil. Bake for 10 to 15 minutes or until golden. Set aside to cool.
    2. Place eggs in a saucepan. Cover with cold water. Place over medium heat. Bring to the boil, stirring often to create a whirlpool (to centre yolks). Reduce heat to low. Simmer for 5 minutes. Drain. Refresh in cold water. Peel and cut eggs into 8 wedges.
    3. Arrange lettuce in a large serving bowl. Pour 1/3 cup dressing over lettuce and turn to coat. Top with croutons, anchovies and egg. Drizzle with remaining dressing and top with parmesan. Season with freshly ground black pepper.

Steamed Fish in Oven

Last week I also cooked a steamed fish dish using the oven instead of grilled fish that I usually do. I found steamed fish is sweeter and tastier. I marinated the fish for around 1 hour in oyster sauce, soysauce, pepper and cooking wine, and put it in the oven afterward. That's it, very easy and yummy dish.

Lamb Neck Stew

Last week I bought some lamb neck bones for the first time and cook and scrumptious stew with the following ingredients:
- potatoes, carrot, parsley, dried thyme leaves and whole peppers. I marinated the lamb with a little bit of cooking wine, seasoned salt as well.

Fried Mince Beef

Yesterday,I cooked a very nice mince beef dish to have with rice vermicelli similar to the "Bun Thit Bo Nuong". Here is the recipe

- Half a kg of mince beef
- 2 tablespoons grated lemon grass
- 1/4 teaspoon of salt
- 1/4 teaspoon of sugar
- 1 tablespoon of fish sauce
- a few drops of honey
- some pepper, crushed garlic and spring onions
- 1 beaten egg

Marinate the above mix for about an hour, and fry them in small flat round pieces with olive oil. It's very yummy, trust me :)
