Mango Pudding

Here is the recipe for Mango Pudding or Jelly that I got from a colleague at work last year. A great desert for hot summer days in Sydney like today (41 degrees, can you believe it?)

Ingredients:
1 medium mango - pureed
1 packet mango jelly (e.g. aeroplane jelly, can be substituted with pineapple or lemon jelly)
1 cup evaporated milk
1 egg - beaten

1. Boil water, dissolve 1 packet jelly in 1 cup hot water
2. Pour onto beaten egg, stir continously
3. Add milk + pureed mango
4. Mix thoroughly until smooth
5. Pour into setting platter
6. Cool & set in fridge
